Imagine sitting on top of a wind swept mountain surrounded by frolicking sheep. A man speaking French (or is it Basque, you have no idea) comes up to you and says something that sounds vaguely menacing but you have no idea because you're a dirty American and you only speak English. But really what does it matter when you're in such a beautiful place? He may have told you that he thinks the sheep have a crush on you or it could be that you're sitting on his hat.
You follow the barnyard aroma to the barn and you see milkmaids....
Oh, never mind, it's not working. We're stuck here in the flattest of the flats and everyone says "you betcha". Best I'm going to do for you is sell you some delicious sheep's milk cheese from the Pyrenees. We have two on special this week--Abbaye de Belloc and P'tit Basque. Both have incredible, smooth texture and mild, milky flavors. These are some of our absolute favorite cheeses. Abbaye de Belloc is on my short list for desert island cheese.
Throw it on a grilled cheese, or with a juicy pear, or like a piece of pizza. These are some fine cheeses.
